Superior Blade

The blade of this knife is a work of art and science. It features a unique Thunderstorm-hammered pattern on a multi-layered Damascus blade. The core is made from SG2 Micro Carbide Powder Stainless Steel, known for its superior hardness of approximately 63 HRC. This ensures excellent rust resistance and a long-lasting edge for professional use.

Hamaguri Edge

The edge of the blade is shaped like a clam, or "HAMAGURI" in Japanese. This special design facilitates smooth cutting and helps to release food easily.

About Yoshimi Kato

Yoshimi Kato, a certified traditional craftsman, took over his father's company, KATO UCHI HAMONO, in 2018. His father, Kintaro Kato, began producing kitchen knives in 1928 and was awarded the Order of the Sacred Treasure, Silver Rays in 1987. Yoshimi Kato continues this legacy, producing knives in the Echizen region, a historic area known for its 700-year tradition of knife-making.
