Hand-forged by legendary Echizen master Takeshi Saji, this 210 mm Rainbow Damascus Gyuto pairs a razor-keen Blue #2 (Aogami #2) carbon-steel core with layers of stainless, copper, and brass that shimmer in a literal rainbow. The natural staghorn handle is water-resistant, comfortably contoured, and utterly unique—no two pieces share the same grain or hue. Balanced at the pinch grip and tempered to 62–63 HRC, it’s an heirloom-quality tool that glides through proteins, produce, and herbs with equal grace.

Q: Is this knife friendly for home cooks as well as pros?
