Introducing the Shibata Koutetsu line of R-2 knives, crafted by the legendary blade smith and sharpener Takayuki Shibata, in his workshop located in Fukuyama City, Hiroshima, Japan. Shibata-san's unique design philosophy is the driving force behind these exceptional knives.
After struggling to find the perfect knife for his kitchen needs, Shibata-san decided to create a new type of knife that would combine the best features of a gyuto and a nakiri. The result is a blade with a slight curve that strikes the perfect balance between reducing friction and ensuring optimal food contact. The knife also features a sharp point that makes it ideal for scoring vegetables, squid, or chicken.
The Shibata Koutetsu knives are made using R-2 powdered stainless steel alloy for the jigane (inner layer), which is then coated with a hagane (outer layer) of softer stainless steel. A beautiful hand-executed rough finish is added to aid in food release.
