This knife is designed for use as a paring knife and pairs notably well with our shattered carbon handle, which can be added below. Note that if you purchase a handle and blade from us, complimentary installation will be provided.
Ginsan #3 holds a unique position as it is stainless yet exhibits characteristics akin to carbon steel. Unlike powdered metallurgy steels, Ginsan reaps the benefits of the hand-forging process. Blacksmith Masters, such as Satoshi Nakagawa, forge traditional Japanese Blades from Ginsan to deliver premium traditional cutlery that combines the feel of carbon steel with the convenient stainless properties, negating the need for constant wiping.
Sharpening Ginsan #3 proves simpler than most stainless steels, and its edge retention is comparable to Shirogami #2. While these knives arrive sharp from the factory, a custom set bevel from Zach Peters is recommended. Sharpening can be added via our add-on items.
