Sakai Takayuki Homura Kogetsu Japanese Chef's Gyuto Knife 210mm (By Itsuo Doi) 

The Homura Kogetsu crafted by the esteemed blacksmith Itsuo Doi, a descendant of the legendary Keijiro Doi. This lineage of artisans has been producing some of the finest hand-forged knives for over 70 years. The family emblem of Mr. Doi, signifying authenticity and craftsmanship, is proudly engraved near the logo on the blade. This Homura Kogetsu Gyuto, complete with a Saya. 

It is not common to get these in stock- so get them while you can! Itsuo Doi uses a special low temperature forge welding process to minimize carbon transfer from the core steel to the cladding of the knife. This translates to a heat treatment you have to feel to believe. The difference is palpable when you sharpen them. We recommend you add Zach Peters sharpening service for the knife in its best form!
